'Breakfast Inspired' Everything Bagel Orzo with Crispy Bacon & Jalapeños

1/2 lb. Pappardelle's Everything Bagel Orzo
2-3 eggs
4 oz. bacon strips
1 jalapeño pepper, seeded & diced
1 avocado, pit removed & skin discarded, sliced into strips
8 oz. whipped cream cheese
2 Tbsp. butter
Salt & pepper, to taste


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain & set aside.
  2. In a large skillet over medium-high heat, cook bacon strips until crispy, about 2-4 minutes per side. Remove from skillet and place on a paper towel-lined plate.
  3. Meanwhile, melt butter in skillet on medium-low heat. Crack eggs and cook sunny side up until cooked through, about 5 minutes. Season with salt & pepper, to taste.
  4. Divide the pasta into serving dishes and place an egg on top with diced jalapeño and cream cheese dollop. Serve with sliced avocado and bacon. Enjoy!
