Creamy Cajun Shrimp Pasta

Serving Size:  4-6

Ingredients:

1 lb. Ragin’ Cajun Linguine
4 tbsp. extra virgin olive oil
1 lb. large shrimp, peeled & deveined
2 tbsp. (plus 1-2 tsp.) Cajun seasoning
1 medium yellow onion, chopped
2 red bell peppers, chopped
3 cloves garlic, finely chopped
Crushed red pepper flakes, to taste
1 tbsp. all-purpose flour
Salt & pepper, to taste
1 cup chicken broth
1 cup milk
2 oz. cream cheese
1⁄2 cup grated Parmesan
2 tbsp. fresh basil, chopped

 

Instructions: 

  1. Cook pasta in a large pot of boiling lightly salted water, stirring occasionally, until al dente, about 8-10 minutes. Drain.
  2. Coat shrimp with 1 tbsp. Cajun seasoning. In a deep skillet, heat 1 tbsp. olive oil over medium heat. Once hot, add shrimp in a single layer and
    sauté for about 1-2 minutes per side, or until shrimp is no longer translucent. Remove from skillet.
  3. In the same skillet, add 1 tbsp. olive oil, onion, and 1 tbsp. Cajun seasoning. Cook until softened, about 2-3 minutes.
  4. Add 2 tbsp. olive oil, bell peppers and garlic. Cook another 5 minutes until the peppers are soft. Stir in 1-2 tsp. Cajun seasoning and flour. Add a pinch each of red pepper flakes, salt, & pepper. Cook another minute until the spices are fragrant and then pour in the broth and milk. Add the cream cheese and whisk until smooth. Bring the sauce to a gentle simmer and cook 5 minutes, until thickened slightly.
  5. Stir in Parmesan. Add pasta and shrimp and cook for 2-3 minutes, tossing until noodles are coated in sauce. Remove from heat and stir in basil. Serve and enjoy!
