½ lb. Pappardelle's Gochujang Fettuccine
2 teaspoons sesame oil
¼ yellow onion, chopped
4 oz. mushrooms, sliced
4 oz. boneless beef short ribs, chopped
4 oz. kimchi, chopped
½ tablespoon gochujang sauce
Green onions, sliced, to taste
1. Cook pasta in 6-8 quarts of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
2. Using a large wok or skillet, heat sesame oil over medium-high heat. Add yellow onions, mushrooms and chopped beef and cook until the beef is no longer pink, about 4-5 minutes.
3. Add kimchi and mix together. Add gochujang and pasta and mix to combine. Let cook for 1-2 more minutes. Remove from heat. Garnish with diced green onions and serve immediately. Enjoy!
