Cacio e Pepe Bianco Mac & Cheese

1 lb. Pappardelle’s Cacio e Pepe Amore
4 Tbsp. unsalted butter
3 Tbsp. all-purpose flour
3 cups whole milk
2 cups shredded gouda cheese
1 cups shredded white cheddar
1 tsp. salt
1 Tbsp. cracked black pepper


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and set aside.
  2. Meanwhile, melt butter in a large saucepan over medium heat. Add flour and cook until flour is brown and has a nutty aroma, 3-5 minutes. 
  3. Whisk in milk until fully incorporated, about 5 minutes, then fold in cheeses. Season with salt & pepper.
  4. Add pasta back to cheese sauce and cook for 5 more minutes
  5. Divide the pasta into serving dishes. Serve and enjoy!
