Cinnamon Apple Noodle Kugel

1 lb. Pappardelle's Gingerbread Mafaldine
5 large eggs, whisked
2 tsp. cinnamon, plus additional for garnish
1/2 cup sugar
Salt, to taste
3 cups unsweetened applesauce
2 Tbsp. vegetable oil, plus more as needed


  1. Preheat oven to 350° F. Grease a 9 x 13" baking dish with vegetable oil.
  2. Cook pasta in a large pot of boiling water, stirring occasionally, until very al dente, about 5 minutes. Drain and and set aside.
  3. Meanwhile, whisk together eggs, 2 tsp. cinnamon, sugar, salt, and applesauce.
  4. Coat the large pot with some vegetable oil, return noodles to pot and fold with more oil and egg-applesauce mixture. Transfer noodles to prepared baking dish and sprinkle with cinnamon.
  5. Bake until the noodle kugel is cooked through and top is slightly crisped and browned, about 45-50 minutes. Remove from heat and and let cool for at least 5 minutes before serving.
  6. Divide pasta into serving dishes and garnish with cinnamon. Serve and enjoy!
