Creamy Shrimp Fajita Tequila Lime Serrano Penne

Ingredients:

1 lb. Pappardelle's Tequila Lime Serrano Penne
2 Tbsp. extra-virgin olive oil, divided
3 bell peppers, ribs & seeds removed, sliced
1 small red onion, sliced
1 lb. shrimp, peeled and deveined
3 Tbsp. Fajita Seasoning Mix
1 (14-oz.) can of diced fire-roasted tomatoes
1/2 cup chicken broth
1/2 cup heavy cream
4 oz. cream cheese, softened
1 cup shredded cheddar cheese
Cilantro, chopped, for garnish

Instructions: 

  1. Heat 1 Tbsp. olive oil in a large skillet over medium heat. Add peppers and onions and sauté, stirring frequently, until tender and soft, about 3-5 minutes. Remove from skillet and set aside. 
  2. Add remaining 1 Tbsp. olive oil to skillet and cook shrimp until opaque and cooked, about 2-3 minutes per side. Sprinkle 1 Tbsp. fajita seasoning over shrimp and toss to coat. Remove from skillet
  3. Add tomatoes, broth, cream, cream cheese and remaining 2 Tbsp. fajita seasoning to skillet. Cook over medium-high heat, stirring occasionally, until cream cheese is melted and sauce has thickened slightly, about 5 minutes. Add cheddar cheese and stir until melted.
  4. Meanwhile, cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and add to skillet.
  5. Add peppers and shrimp to skillet with pasta and sauce. Cook and stir until heated through. 
  6. Divide the pasta into serving dishes and garnish with cilantro. Serve and enjoy!
