Crispy Bacon and Broccoli-Cheddar over Organic Whole Wheat Fettuccine

Ingredients:
1/2 lb. Pappardelle's Organic Whole Wheat Fettuccine 6 oz. thick-cut bacon, cooked & chopped into bite-sized pieces 2 Tbsp. salt 10 oz. broccoli, stem removed & cut into small florets 1/4 cup grated sharp white cheddar cheese
Instructions:
Bring a large pot of water to a boil. Add salt and broccoli and cook until soft, about 8 minutes. Use a slotted spoon to remove broccoli from the pot and place in a blender.
Bring the pot of water back to a boil and cook pasta, stirring occasionally, until al dente, about 10-12 minutes. Drain and set aside.
Meanwhile, after pasta has cooked for 2-3 minutes, take 1/3 cup pasta water and add to blender with broccoli and cheese. Blend on high until mixture is smooth.
Divide pasta into serving dishes and top with broccoli-cheddar sauce and bacon. Serve and enjoy!
