Everything Bagel Orzo with Pan-Seared Salmon Topped with Dill Créme Fraîche

Serving Size: 4-6

Ingredients:

1 lb. Pappardelle’s Everything Bagel Orzo
4 salmon filets, 6-8 oz. per piece
1 tablespoon lemon juice
1 pint cherry tomatoes, halved
3-4 tablespoons extra-virgin olive oil
8 oz. crème fraÎce
½ bunch fresh dill, chopped
1 tablespoon capers, roughly chopped
1 tablespoon lemon juice
Salt & pepper, to taste

Instructions: 

  1. Preheat oven to 400 degrees.
  2. Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente, about 8-10 minutes. Drain.
  3. Toss red onion and tomato halves in 1-2 tablespoons olive oil. Season with salt & pepper. Place on a baking sheet and cook in oven for about 10-15 minutes, or until tomatoes and onions softened and have a slight char.
  4. Meanwhile, season salmon filets with salt & pepper on both sides. Add 2 tablespoons olive oil to a pan and heat over medium-high heat. Once pan is hot, add salmon filets, skin side down, and cook for 4-5 minutes until crispy. Flip and cook for another 4-5 minutes or until internal temperature has reached 145 degrees.
  5. Mix crème fraÎche, dill, capers, and lemon juice. Season with salt & pepper.
  6. Plate pasta and top with roasted onions, tomatoes, salmon filets, and dill crème fraÎche. Serve and enjoy!
