Gluten-Free Dark Chocolate Pasta Shavings with Balsamic Strawberries and Nut Sauce

4 oz. Pappardelle's Gluten-Free Dark Chocolate Pasta Shavings
1 cup raw unsalted mixed cashews and pistachios
3/4 cup water
2 tablespoons maple syrup
Pinch of salt
1/4 teaspoon vanilla extract
3 cups strawberries, cut lengthwise into quarters
2 tablespoons Bella Sol Modena Barrel-Aged Balsamic Vinegar
2 tablespoons sugar
2 tablespoons dark chocolate, grated
1 strawberry, halved and mint sprigs, to taste, for garnish


  1. Soak nuts in water for three hours. Drain well and transfer to a blender. Add the water, maple syrup, salt, and vanilla extract. Blend into a very smooth paste.
  2. Add balsamic and sugar to strawberries. Toss gently until well combined. Let sit for 10 minutes to marinate.
  3. Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente, about 14-16 minutes. Drain. Let sit until reaches room temperature.
  4. Toss the pasta with nut mixture and strawberries. Dust with grated chocolate. Add halved strawberry and mint for garnish. Serve and enjoy!
