Gnocchi Skewers with Cherry Tomatoes and Fresh Basil

Serving Size:  2-3

Ingredients:

14 oz. Pappardelle’s Potato Gnocchi or Pappardelle's Gluten-Free Vegan Potato Gnocchi
Cherry tomatoes
Fresh basil
Bella Sol Basil Olive Oil or Bella Sol California Meyer Lemon Olive Oil or Bella Sol Roasted Garlic Avocado Oil
Sea salt & pepper

Instructions: 

  1. Bring 3 quarts of water with a pinch of salt to a gentle boil. Add frozen gnocchi to boiling water. Occasionally, stir gnocchi to prevent sticking to pot. Cook for approximately 2-3 minutes, or until pasta floats to surface. Remove from water with a slotted spoon and taste for doneness.
  2. Thread on skewers with cherry tomatoes, fresh basil and gnocchi.
  3. Douse the skewers with oil, salt and pepper.
  4. Grill the skewers for 2 minutes, or until charred. Remember to rotate.
