Green Goddess Pasta Salad

Ingredients:

1 lb. Pappardelle’s Green Goddess Amore 
1 cup mayonnaise
4-5 green onions, chopped
1 cup fresh basil leaves, chopped
Juice of 1 lemon
2 garlic cloves, chopped 
2 anchovies, chopped 
Salt & pepper, to taste
2/3 cup sour cream
1 cup cherry tomatoes, halved
1 red bell pepper, chopped
1 cup marinated artichoke hearts, chopped 
1/4 cup black olives, pitted & halved
1 cup small mozzarella balls
2 cups arugula

Instructions: 

  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain, rinse with cold water and set aside.
  2. In a blender, combine mayonnaise, green onions, basil, lemon juice, garlic, anchovies, 1 tsp. salt and 1 tsp. pepper until smooth. Stir in sour cream and adjust salt, to taste.
  3. In a large bowl, combine cherry tomatoes, bell peppers, artichokes hearts, olives, mozzarella, and arugula. Add pasta and 1⁄2 cup green goddess dressing. Gently mix until combined and cover with plastic wrap.
  4. Chill in refrigerator for 1 hour before serving. Enjoy!
