Spicy Shrimp Sushi Bowl with Tuxedo Orzo

Ingredients:

1/2 lb. Pappardelle’s Tuxedo Orzo
½ lb. cooked shrimp, shelled & deveined, cut into bite-sized pieces
1 Tbsp. mayonnaise
1 tsp. Sriracha
½ tsp. each: rice vinegar, soy sauce, sesame oil
½ cup cucumber, diced
½ cup shelled edamame
½ avocado, diced
½ jalapeño pepper, deseeded and sliced
Furikake seasoning, for garnish
Sesame seeds, for garnish

Wasabi Sauce:

1 Tbsp. mayonnaise
½ Tbsp. rice vinegar
1 Tbsp. wasabi paste
½ tsp. sesame oil

 

Instructions: 

  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and set aside.
  2. In a large bowl, whisk together 1 Tbsp. mayonnaise, sriracha, 1/2 tsp. rice vinegar, soy sauce and 1/2 tsp. sesame oil. 
  3. Add shrimp to marinade, tossing to coat.
  4. In a small bowl, whisk together wasabi sauce ingredients to combine.
  5. Divide the pasta into serving bowls.Divide cooked orzo between bowls. Top with shrimp, cucumber, edamame, avocado and jalapeño. Drizzle wasabi sauce over top and garnish with furikake seasoning and sesame seeds. Serve and enjoy!
