Sweet Heat Pineapple Pasta Salad

Serving Size: 4-6


1 lb. Pappardelle's Sweet Heat Pineapple Blend Pasta
3 cups pineapple, diced
1 red bell pepper, chopped
½ cup red onion, chopped
¼ cup fresh cilantro, chopped
1 medium jalapeño pepper, seeds removed, finely chopped
1 avocado, cut and cubed
3 tbsp. lime juice
Salt & pepper, to taste
Drizzle of extra-virgin olive oil


  1. Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente, about 10-12 minutes. Drain. Immediately run under cold water to stop the cooking process. Set aside.
  2. In a medium bowl, combine pineapple, bell peppers, onion, cilantro, jalapeno, and avocado. Add lime juice and mix well.
  3. Combine salsa with pasta. Drizzle olive oil and salt & pepper over pasta. Refrigerate for at least one hour before serving. Enjoy!
