Tomato-Avocado Penne Pasta Salad

1/2 lb. Pappardelle's Tomato Basil Penne
4 roma tomatoes, diced into 1" pieces
3 avocados, pitted, skin removed & diced into 1" pieces
1/2 cup red onion, thinly sliced
1/4 cup cilantro, chopped
2 limes, juiced
Salt & pepper, to taste


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and transfer to a large bowl. Refrigerate for at least 2 hours.
  2. Once pasta is cooled, add tomatoes, avocado, onion, and cilantro. Add half lime juice and toss to combine well until avocado breaks down forming a sauce. Add remaining lime juice, salt & pepper. Toss until noodles are coated.
  3. Divide the pasta into serving dishes. Serve chilled or hot. Enjoy!
