Tomato-Avocado Caprese Penne Pasta Salad

Ingredients:
1/2 lb. Pappardelle's Tomato Basil Penne
4 roma tomatoes, diced into 1" pieces
3 avocados, pitted, skin removed & diced into 1" pieces
1/2 cup red onion, thinly sliced
1/4 cup basil, finely chopped
3 tbsp balsamic vinegar
2 tbsp olive oil
1 cup mozzarella pearls, or diced mozzarella
Salt & pepper, to taste
Instructions:
- Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and rinse under cool water. Transfer to a large bowl.
- Once pasta is cooled, add tomatoes, onion, basil, mozzarella pearls, balsamic vinegar, olive oil, and salt and pepper. Toss to combine.
- Add in the avocado and gently toss, trying not to break it up.
- Chill in the refrigerator for at least 30 min or up to 2 hrs.
- Divide the pasta into serving dishes and enjoy!
