Tomato-Avocado Caprese Penne Pasta Salad

1/2 lb. Pappardelle's Tomato Basil Penne
4 roma tomatoes, diced into 1" pieces
3 avocados, pitted, skin removed & diced into 1" pieces
1/2 cup red onion, thinly sliced
1/4 cup basil, finely chopped

3 tbsp balsamic vinegar
2 tbsp olive oil
1 cup mozzarella pearls, or diced mozzarella
Salt & pepper, to taste


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain and rinse under cool water. Transfer to a large bowl. 
  2. Once pasta is cooled, add tomatoes, onion, basil, mozzarella pearls, balsamic vinegar, olive oil, and salt and pepper. Toss to combine. 
  3. Add in the avocado and gently toss, trying not to break it up. 
  4. Chill in the refrigerator for at least 30 min or up to 2 hrs. 
  5. Divide the pasta into serving dishes and enjoy!
