Tuscan Chicken Pasta with Tomato Basil Fettuccine

Ingredients:
1/2 lb. Pappardelle’s Tomato Basil Fettuccine
1 lb. boneless, skinless chicken breasts
3 Tbsp. extra-virgin olive oil, divided
2 tsp. paprika, divided
1-½ tsp. garlic powder, divided
1-½ tsp. salt, divided
¾ tsp. black pepper, divided
1 tsp. oregano
4 Tbsp. unsalted butter
¼ cup shallot, finely diced
¼ cup sun-dried tomatoes, chopped
1 tsp. garlic, minced
2 Tbsp. tomato paste
1-½ cups heavy cream
1-½ cups milk
1 cup fresh spinach
1 cup grated Parmesan cheese, plus more for serving
1 cup cherry tomatoes, halved lengthwise
Fresh parsley, for garnish
Instructions:
- Preheat oven to 350ºF.
- Combine 1 tsp. paprika, 1 tsp. garlic powder, 1 tsp. salt, and ½ tsp. pepper in a small bowl. Drizzle chicken with 2 Tbsp. olive oil, then sprinkle seasoning mixture over chicken and rub in on all sides.
- Heat a large, oven-safe skillet over medium-high heat and heat remaining 1 Tbsp. of olive oil. Add chicken and sear until browned, or about 3 minutes on each side (chicken will not be cooked through).
- Transfer skillet to oven and cook for 10-15 minutes, or until internal temperature reaches 165ºF. Remove from oven, cube chicken and set aside.
- Meanwhile, cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 8-10 minutes. Drain and set aside.
- In the same skillet, melt butter over medium heat. Add shallots and sun-dried tomatoes, cooking until shallots are softened, about 3-5 minutes. Add garlic and cook until fragrant, about 1 minute.
- Add tomato paste, oregano, and remaining paprika, garlic powder, salt and pepper, stirring to combine. Add heavy cream and milk and stir.
- Add spinach, Parmesan and cherry tomatoes, tossing to combine. Reduce heat to low and simmer until cheese is melted and spinach is wilted, about 8-10 minutes.
- Add pasta and chicken and toss to coat.
- Divide the pasta into serving dishes and garnish with Parmesan cheese. Serve and enjoy!
