Zesty Ranch Rooster Combs with Creamy Chicken & Bacon

1 lb. Pappardelle's Zesty Ranch Rooster Comb
8 oz. thick-cut bacon, cut crosswise into 1⁄2-inch pieces
3⁄4 cup yellow onion, finely chopped
2 cloves garlic, smashed & peeled
1-1⁄2 cups heavy cream
1 medium carrot, finely chopped
6 cups shredded rotisserie chicken
Freshly grated Parmigiano-Reggiano cheese, to taste
Fresh parsley, coarsely chopped, to taste
Salt & pepper, to taste


  1. In a large skillet over medium-high heat, cook bacon, stirring frequently, until just cooked through with crispy edges, about 5 minutes. Using a slotted spoon, transfer to a plate, leaving the fat in the pan.
  2. Add onion, garlic, and salt & pepper and cook, stirring frequently, until onion is tender, about 5 minutes. Add cream and bring to a simmer. Cook until the sauce is slightly thickened, about 5 minutes.
  3. Meanwhile, cook pasta in a large pot of boiling lightly salted water, stirring occasionally, until al dente, about 10-12 minutes. Drain pasta, reserving 1-1⁄2 cups pasta water.
  4. Add pasta to the sauce. Then add 3⁄4 cup pasta water, chicken, and reserved bacon and toss to combine. (Add more pasta water to loosen the sauce, if desired).
  5. Top with Parmigiano-Reggiano, parsley and salt & pepper. Serve immediately and enjoy!
