Calabrian Chile & Honey Pappardelle with Arrabbiata Shrimp

Ingredients:

1/2 lb. Pappardelle's Calabrian Chile & Honey Pappardelle
3 Tbsp. extra-virgin olive oil, divided
1 lb. shrimp, peeled & deveined
½ tsp. salt
¼ tsp. black pepper
1 small red onion, diced
4 cloves garlic, minced
1 tsp. crushed red pepper flakes
3 cups tomato sauce
¼ cup fresh basil, roughly chopped, plus more for serving

Instructions: 

  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 8-10 minutes. Drain, reserving 1/2 cup pasta water and set aside. 
  2. Heat 1 tbsp. olive oil in a skillet over medium-high heat. Add shrimp to the pan, season with salt & pepper, and cook until shrimp is opaque, about 2-3 minutes per side. Transfer to a bowl and set aside.
  3. Heat the remaining olive oil in a large saucepan over medium heat. Add onions and cook until softened, about 5 minutes. Add garlic and crushed red pepper and cook, stirring frequently, until fragrant, about 1-2 minutes.
  4. Add tomato sauce and basil and simmer on low, stirring occasionally, until the sauce thickens, about 20-25 minutes. If sauce is too thick, add spoonfuls of pasta water to loosen. Toss pasta in sauce mixture until noodles are coated. 
  5. Divide pasta with sauce and shrimp among dishes. Garnish with basil. Serve and enjoy!
