Gourmet Five Blend Sicilian Veggie Pasta Salad

1 lb. Pappardelle’s Gourmet Five Blend
1/3 cup extra-virgin olive oil
3 cloves garlic, sliced
1/2 tsp. crushed red chili pepper flakes
3 Tbsp. tomato paste
1-1/2 cups white wine
3 Tbsp. capers
1-1/2 cups olives of choice, pitted
1-1/2 cups cherry peppers
2 cups artichoke hearts
8 oz. cherry tomatoes, halved
1/2 cup parsley, chopped
1-1/2 cup grated Parmesan cheese


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 10-12 minutes. Drain, reserving 1/3 cup of pasta water, and set aside.
  2. Heat olive oil in a skillet over medium heat. Add garlic and red chili flakes and cook, stirring constantly, until garlic is fragrant, about 1 minute. Stir in tomato paste and cook for an additional 2 minutes.
  3. Whisk in white wine and simmer, reducing heat as needed, until it is reduced by half, about 8-10 minutes. Add olives, cherry peppers, artichoke hearts and capers, cooking for 3 minutes more.
  4. Stir in pasta, reserved pasta water, cherry tomatoes, Parmesan cheese and parsley, tossing to incorporate ingredients.
  5. Divide the pasta into serving dishes. Refrigerate or serve immediately. Garnish with additional Parmesan cheese and parsley. Enjoy!
