Hoisin Pasta Salad with Plain Rooster Combs

Ingredients:
1/2 lb. Pappardelle's Plain Rooster Combs
4 oz. frozen shelled edamame
1/2 cup hoisin sauce
1/4 cup kewpie mayonnaise
Salt & pepper, to taste
1 large red bell pepper, ribs & seeds removed, sliced into 1" strips
1/2 cup shredded carrots
1/2 English cucumber, cut in half and sliced
1/2 cup cilantro, chopped
1/4 cup green onion, chopped
Instructions:
- Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 9-11 minutes. Add edamame to the pot for the last minute of cooking. Drain and set aside. Let cool in the refrigerator for at least 2 hours.
- In a medium bowl, whisk together hoisin sauce and kewpie mayonnaise.
- Once the pasta is cooled, mix it with the hoisin dressing. Season with salt & pepper, to taste. Add bell pepper, carrots and cucumber and mix well.
- Divide the pasta into serving dishes. Garnish with cilantro and green onions. Serve and enjoy!
