Lemon-Herb Pasta Salad with Marinated Chickpeas

8-9 oz. Pappardelle’s Gluten-Free Lemon Garlic Penne
1 (14-oz.) can chickpeas, drained & rinsed
½ cup extra-virgin olive oil, divided
1 clove garlic, grated
Zest & juice from 1 lemon
1 tsp. salt, plus more to taste
½ cup fresh basil, finely chopped
1/2 cup fresh parsley, finely chopped
½ cup grated Parmesan cheese, plus additional for garnish


  1. In a bowl, add chickpeas, ¼ cup olive oil, garlic, a squeeze of lemon juice, and 1 tsp. salt. Stir to combine and allow to marinate while you prepare the pasta.
  2. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 8-10 minutes. Drain and combine with marinated chickpeas and toss.
  3. Add remaining olive oil, lemon juice and zest, basil, and parsley. Season with salt & pepper, to taste. Add Parmesan cheese and stir to combine.
  4. Divide pasta into serving dishes and garnish with Parmesan. Serve hot or cold and enjoy!
