Tomato, Onion and Artichoke Fettuccine Alfredo

1 lb. Pappardelle’s Basil Garlic Fettuccine
½ cup butter
1-½ cup heavy cream
2 tsp. garlic, minced
½ tsp. Italian seasoning
½ tsp. salt
¼ tsp. black pepper
2 cups grated Parmesan cheese, plus more for serving
2-3 tomatoes, diced
1 red onion, diced
1 (14-oz.) jar marinated artichokes, drained & chopped


  1. Cook pasta in a large pot of boiling water, stirring occasionally, until al dente, about 8-10 minutes. Drain and set aside. 
  2. Meanwhile, add butter and cream to a saucepan and simmer over low heat for 2 minutes.
  3. Whisk in garlic, Italian seasoning, salt & pepper, continuing to cook for 1 minute. Whisk in Parmesan and stir to combine.
  4. Once desired consistency is reached, remove from heat and add pasta, tomatoes, red onion and artichokes. Stir to combine. 
  5. Divide pasta among dishes and top with Parmesan. Serve and enjoy!
